Roasted Sweet Potato Delight
1 small bag sweet potatoes
4 ounces Earth’s marinade
1 ounce coconut oil
Dry italian herbs (optional)
Preheat the oven to 375ºF.
Wash sweet potatoes with a vegetable brush. (Tip: Leave the skin on for additional nutrients.)
Cut into rounds. You can also cut into 1-inch chunks if preferred. Make sure the cuts are consistent for even roasting.
Place sweet potatoes in a large bowl, add Earth’s marinade and sprinkle dry herbs (optional). Toss until fully coated.
Arrange sweet potatoes on a non-stick baking sheet and roast for 20 minutes.
Turn potatoes over and rotate the pan for full browning. Roast for an additional 20 minutes.
Serve 4 ounces with your salad, entrée, or pack
for a snack. Try roasting with other vegetables, such as brussel sprouts and purple carrots.
